Expecting foods to cook without some moisture Make sure there is enough moisture in the pan to cause the lid to seal and the foods to tenderize. One teaspoon of water is sometimes enough with dry vegetables. Many need no additional moisture at all. Make sure enough moisture exists to make at least a little steam to tenderize your foods.
Not turning down the heat! If you start cooking before the pan has heated up fully, the temp will gradually rise on you and eventually burn your food. A little experience with your stove and the cookware will help you know where the threshold is.
Turning down the pan to quickly after just placing it on the heat and hearing the clicker begin. This occasionally is just some of the air escaping.
Turning down the pan when the contents are still cold. Sometimes, if the pan is full of very cold vegetables, they can bring the temp down too low to cook even after a little steam has made the clicker click. Make sure the contents of the pan are heated enough before you turn the temp way down. This sometimes happens with large chunks of cold potatoes and a little water which turns to steam before they a re heated up fully.
Turning down water filled pans too far because the steam is making them continue to click. Sometimes boiling liquids like beans will have to be turned up a little after they have stopped clicking so that the temp is high enough to cook them (187 degrees). This happens only when they are on a really high boil and quickly reduced.
Use your Lids to introduce Moisture If it looks like your food is sticking place your lid on the pan this will introduce moisture, it will help loosen the food.
Remember To add a tablespoon of water on top of your lid when cooking and spin the lid to ensure a good water seal this will help the cooking process.
Heating Pan When cooking eggs or searing foods ( pan frying) such as meats or tofu preheat your pan first. Preheat pan for pancakes and french toast too.
